A short-grain, sticky rice specifically used in Japanese cuisine for making sushi, onigiri, and rice bowls. It has a unique texture and a slightly sweet, tangy flavour, which comes from seasoning it with rice vinegar, sugar, and salt after cooking. This stickiness helps the rice hold its shape, making it ideal for forming rolls and nigiri. Sushi rice is also versatile and can be used in dishes beyond traditional sushi, adding a delightful texture to various meals.
Known as "shari" or "sumeshi" in Japan, sushi rice has been a staple in Japanese cuisine for centuries. Its origins trace back to the ancient practice of fermenting fish wrapped in rice, which eventually evolved into modern sushi. Initially, the rice was discarded, but during the Edo period (1603-1868), sushi rice became an essential component of the dish. Today, it remains a crucial element of Japanese culinary culture and is enjoyed worldwide.
Cooking Instructions
Rinse the rice under cold water until the water runs clear. Combine 1 part rice with 1¼ parts of water in a pot and soak for 30 minutes. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from the heat and let it steam for 10 minutes.
In a bowl, mix 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and ½ teaspoon of salt until dissolved. Gently fold this mixture into the hot rice and let it cool to room temperature for sushi or rice bowls.
