Also known as candied ginger, is made by cooking fresh ginger root in sugar syrup and then coating it in sugar. This process preserves its spicy-sweet flavour while creating a chewy texture. It is commonly used as a snack, in baking, or as an ingredient in desserts, savoury dishes or tea due to its digestive benefits and soothing properties.
Ginger became popular in Europe during the Medieval period (5th to 15th century) when it was highly valued for its medicinal and culinary uses. It was commonly used to aid digestion and served as a sweet treat for the wealthy. However, its origins date back much earlier; ancient Chinese and Indian cultures had been preserving ginger in honey or sugar for thousands of years. During the Age of Exploration (15th to 17th century), ginger became more widely available as trade routes expanded, and crystallized ginger became a staple in European confections and desserts.
